So it’s that time in the semester where the assignments are pouring in and the temperature has dropped to freezing. As a mom you know that you have to prepare a meal for your family, but the last thing on your mind is cooking.
If you are like me, you try to make the most out of your left overs. I slow roast a whole chicken often, so that I am able to make different meals from it. Preparing meals in advance is another way to manage time. White chili is one that I make with the chicken often. I cut corners by using salsa, which has onions, jalapeño peppers, tomatoes and other ingredients needed to make the chili.
If you have a lot to do during the day and want dinner on the table when you get home, I recommend white chili. Make sure to soak your northern beans overnight and slow cook them in the crock pot during the day with seasonings and chicken broth. When you return home, chop up the leftover chicken and throw in the salsa. Garnish with shredded cheese and sour cream and your family will think you slaved all day in the kitchen it’s so good. Plus it leaves you with plenty of time to study.
